Hello all you fabulous people welcome toSpain on a Fork today we have such a great episode
seriously this is a special video tworeasons why the first one is today is my
birthdaywhat it's my birthday which means the
second thing I'm in the mood for somecomfort food folks that's exactly what
we're doing today we're making somegarlic roasted potatoes with melted cheese
this dish is the top of the popsthis is comfort food at its best
the potatoes have an insanely deliciousflavor to them the dish is effortless
to put together and it's all done in alittle over 30 minutes seriously guys so
deliciousso easy to make let's dive right in
I'm gonna begin by cleaning 3medium-sized yukon gold potatoes under
some cold running water now I love toleave the skins on my potatoes as it
gives them a beautiful rustic texture andflavor but if you prefer you can peel your potatoes
once the potatoes are well cleanedI'm gonna pat them completely dry
and cut each potato into 1/2 inch piecesI like to cut each potato in half
each half in halfto end up with four evenly sized quarters
cut the quarter right down the middleand into half inch pieces
and as you're cutting your potatoesadd them into a large bowl
once you have all your potatoes cut and into the bowlI'm gonna add in 2 tablespoons of extra
virgin olive oil over the potatoes
shred in 5 large cloves of garlic ifyou don't have a shredder you can mince
your garlic's and just add them in thereand season with 1 teaspoon of sea salt
and freshly cracked black pepperand I'm gonna toss this all together
until everything is well combined like Ialways tell you guys this is such an
important step you want that olive oilthat garlic and all those seasonings to
be evenly divided througheach piece of potato
then I'm gonna transfer the potatoes into abaking tray that's lined with parchment paper
and make sure all the potatoes arein a single layer that way they all evenly cook
and I'm gonna add thepotatoes into a preheated oven bake and
broil option that's bottom heat and topheat
250 degrees Celsius which is 475 degreesFahrenheit
if your oven doesn't have the bake and broiloption at the same time no big deal just
bake them for the exact same amount oftime I'm cooking these and then add them
to the broiler between two to three minutesalright while our potatoes are
roasting in the oven I'm gonna grab ablock Manchego cheese this is a
mild one so it's not too strong inflavor and shred a generous cup of it
now to make these potatoes you can usewhatever cheese you want but I do
recommend that you go on a hunt downfor this queso Manchego it really
gives these potatoes an incredibleflavor you'll find a link in the
description box below to the one thatI'm using
and I'm also gonna finely chop ahandful of fresh chives
okay let's move back to our potatoes they´ve beenroasting in the oven for about 25 minutes
and they should be perfectly cooked I'mgonna take them out of the oven
transfer them into an ovenproof pan if you don'thave an oven proof pan no big deal just
leave them in the baking tray and evenlysprinkle the shredded cheese over the potatoes
and for the last touch I'm gonna sprinkle ina generous 1/2 teaspoon of
sweet smoked Spanish paprikado not skip this step folks this is what
gives this dish that incredible pop ofSpanish flavors and I'm gonna add the
potatoes back into the oven and leavethem in there for a couple minutes until
the cheese is fully melted
and check it out our garlic roastedpotatoes with melted cheese is done
seriously look how insane this looks I'mgonna sprinkle it with the finely
chopped chives give it a try and let youknow how this turned out

it's so good I don't know what tosay but I'll tell you one thing it is
comfort foodit is so amazing the potatoes have an
incredible texture to them and thenmixed in with that melted cheese and the
smoked paprika it's insanely deliciousguys you know it kinda stinks on your
birthday to be on lockdown or quarantinecan´t go out can't do anything but you know
what making foods like this at home puts abig smile on your face really quick before
